Ingrediente: varza murata(cantitatea la alegere in functie de nr de persoane de la masa), scarita afumata cu boia(am avut 5 bucati), ceapa, ulei,sare, o rosie, piper, cimbru. </div>

Ceapa se taie marunt si se caleste in ulei. Eu prefer mai mult sa o fiert decat sa o prajesc. Deci, foarte putin timp o prajesc apoi pun apa si o las sa fiarba pana se inmoaie. Se condimenteza cu sare si piper dupa gust. Dupa ce scade apa, se pun bucatile de scarita. Tot asa ca la ceapa, putin prajite in uleiul cu ceapa, iar apoi o canita de apa. Dupa ce scade apa, se pune o lingurita de boia pentru culoare. Se adauga varza care a fost lasata in prealabil la desarat in apa rece. Se adauga apa calda cat sa acopere varza si se lasa la fiert. Se pune cimbru uscat(din asta am avut). Bineinteles, cel proaspat este mai bun, dar nu am avut.</div>

Din cand in cand se amesteca si se verifica sa nu scada apa prea tare pentru ca se prinde de oala. </div>

Cand este fiarta varza se adauga o rosie decojita si taiata cubulete. Se mai lasa la fiert pana scade apa de pe varza.</div>

Cand eram mica bunica mea facea des aceasta reteta, doar ca folosea carne de porc. Eu am facut reteta cu carne de curcan.</div>

Ingrediente: 1 kg carne tocata de curcan, 4oua fierte(minim 6-7 minute), 3 felii de paine, 2 fire de usturoi verde, 3 fire de ceapa verde, patrunjel, si marar dupa gust, sare, piper, boia de ardei dulce, 2 oua crude, 3 linguri ulei, pesmet si ulei pentru tapetat tava.</div>

Painea se inmoaie in apa. Se stoarce foarte bine si se amesteca cu toate ingredientele in afara de ouale fierte. Stiu ca sunt persoane care nu gusta carnea cruda, dar eu o gust ca sa nu o arunc apoi. Am mai asezonat cu sare si piper pana am ajuns la gustul dorit.</div>

Tava(eu am folosit o forma pentru chec) se unge cu ulei si se tapeteaza cu pesmet. Jumatate din compozitia de carne se pune in tava, se aseaza ouale si se imping putin in carne, si apoi se acopera cu carnea ramasa. Se coace minim 45 minute. Se incearca daca este facuta carnea. </div>

Pentru ca am participat la <a href="http://www.agendaculinara.blogspot.ro/2012/07/concours-mare-concurs-clatidiada.html">clatidiada bloggerilor</a> si am castigat tigaia Fissler, am testat-o. Am hotarat sa fac altfel de clatite, nu traditionale. Reteta este "clatite crispy". Se pot servi ca aperitiv.</div>
<div style="text-align: center;">
Vreau sa va spun ca tigaia Fissler este extraordinara. Nu se prinde, nu trebuie folosit ulei(cel putin la aceasta reteta), nu arde si nu scoate fum. Parca nici nu faceam clatite, nu mirosea nimic in bucatarie.</div>
<div style="text-align: center;">
Ingrediente pentru clatitele crispy: 125 gr faina, 250 ml lapte, un varf de cutit de sare, un ou, 2 linguri ulei; pentru umplutura: felii de sunca, felii de branza topita, pasta de ardei; pentru prajit: ou, ulei, faina, fulgi de porumb, praf chili, sare, piper.</div>

Intr-un castron se pun faina, oul, sarea si uleiul. Se adauga treptat laptele si se amesteca energic pentru a nu se face cocoloase. Dupa ce aluatul este gata, se lasa pentru 10 minute la frigider.</div>

Intre timp am spalat tigaia pentru ca am folosit-o pentru prima data. Atentie: nu se folosesc ustensile ascutite pentru a nu se zgaria.</div>

Se fac clatitele(abia am reusit sa imi pun separat clatitele pentru mine, ca dispareau din farfurie!)</div>

Clatita se unge cu pasta de ardei, se pune sunca si branza topita. Se inchide la capete pentru a nu iesi branza, si se ruleaza. Se da prin faina, ou(batut cu sare, piper si praf de chili) si fulgi de porumb sfaramati. Se prajesc in ulei incins. Dupa ce s-au racit se taie dupa preferinte.</div>

Ingrediente pentru tava mica de chec: 3 oua, 10 linguri faina, 10 linguri zahar, 10 linguri lapte, 6 linguri ulei, jumatate de plic de praf de copt, cacao.</div>

Albusurile se bat spuma. Se adauga pe rand cele 10 linguri de zahar si se mixeaza foarte bine pana se topeste zaharul. Se adauga galbenusurile, laptele si uleiul(eu am amestecat laptele si uleiul intr-un pahar). La sfarsit se incorporeaza faina amestecata cu praful de copt. Se lucreaza cu mixerul si merge foarte repede. Si cand am pus faina am folosit mixerul si a iesit un aluat foarte pufos.</div>

Jumatate din compozitie se pune in tava unsa cu ulei si tapetata cu faina.</div>

Ingrediente: 2 oua, 4-5 frunze de leurda, cateva cubulete de cas de oaie, sare, piper, ulei.</div>

Dupa cum stiti, italienii sunt cunoscuti ca fiind mari consumatori de paste si pizza. Am mancat ravioli facuti in casa. Foarte buni. Asa ca, am batut cu pumnul in masa (!?) si mi s-au facut ravioli.</div>

Ingrediente: 1 kg faina din gris, 9 oua(8 in aluat, unul in compozitia de branza), apa calduta, 700 gr telemea de vaca( marca Vetisor de la Unicarm), 150 gr urda framantata cu verdeturi (de la Unicarm), patrunjel, nucsoara, sare.</div>

Telemeaua se framanta impreuna cu urda, patrunjelul maruntit, putina sare si nucsoara, si un galbenus de ou.</div>

Se pregateste aluatul: faina de gris se framanta cu 8 oua+albusul de la oul folosit la branza, putina sare si apa calduta adaugata treptat pana rezulta un aluat mai tare(ca si la taiteii de casa). Se framanta foarte bine (asa cum se prezinta in filmulet). Aluatul se tine acoperit ca sa nu se usuce.</div>

Se ia cate o bucata din aluat si se intinde cu sucitoarea. Se trece prin masina de taitei(pozitia 1) de 4-5 ori (impaturind aluatul in 2 de fiecare data), apoi pe pozitia 5 o singura data. Pentru a vedea cum se fac ravioli, vizionati filmuletul (cam greu de explicat tehnica). Aluatul care ramane de la fiecare patura se framanta din nou si se fac alte paturi (nimic nu se arunca, totul se "recicleaza")</div>

Dintr-un kg de faina de gris au iesit 172 de ravioli. 30 i-am fiert in apa cu sare timp de 15 minute si i-am mancat cu <b><span style="color: #cc0000;"><a href="http://agendaculinara.blogspot.com/2010/11/sos-ragu.html">sos ragu </a></span></b>si parmezan. Pe restul i-am pus cate 20 intr-o punga si la congelator. Cand vreti sa mancati ii puneti in apa care fierbe direct congelati.</div>

Din cand in cand se amesteca ca sa nu se prinda kaiserul. Se tine pe foc pana se inmoaie ardeiul. Cu o lingurita(si cu mare grija pentru ca se rup usor) se scoate miezul.</span></div><div style="text-align: center;"><span>Intr-o tava pentru cuptor se aseaza jumatatile de cartofi. Fiecare se umple cu compozitia de legume.</span></div><div style="text-align: center;"><span>Separat se pregateste sosul de cascaval. Se topesc pe foc vreo 2 linguri de unt. Se pune faina amestecand energic pentru a nu se face cocoloase. Se adauga laptele treptat, amestecandu-se continuu. Cand sosul se ingroasa se adauga cascavalul dat pe razatoarea mare, putina nucsoara, sare, piper, smantana Gran Cucina(nu stiu cat am pus pentru ca am tot gustat pana am ajuns la gustul dorit). Se taie felii mai groase si se dau prin faina, ou batut cu putina sare, faina, ou, pesmet. Eu asa procedez ca sa aibe crusta cat mai groasa.</div><div style="text-align: center;">Uleiul se incinge foarte bine. Se pun feliile de cascaval, iar cu o lingura se pune ulei fierbinte peste ele. In acest mod se formeaza si deasupra crusta, iar atunci cand le veti intoarce si pe partea cealalta nu se va topi cascavalul. </div><div style="text-align: center;">Puneti alaturi cateva felii de sunca sau kaiser, ceva muraturi si este gata micul dejun. I-am curatat, spalat si fiert timp de 10 minute. Dupa ce a dospit se framanta cu faina, iaurtul, sarea, busuiocul uscat si uleiul. Aluatul trebuie bine framantat pana se desprinde de pe mana. Se lasa o ora in loc cald ca sa creasca pana isi dubleaza volumul.</div><div style="text-align: center;">Intre timp se pregateste umplutura. Nu stiu cata telemea am folosit pentru ca nu am cantarit-o. Oricum, nu mi-a ajuns si am facut 2 turte fara branza.</div><div style="text-align: center;">Deci, branza se da pe razatoarea mare si se amesteca cu mararul tocat marunt. Daca nu este destul de sarata, se mai adauga sare.</div><div style="text-align: center;">Aluatul se imparte in parti egale. Fiecare bucata se intinde in forma dreptunghiulara si se pune umplutura deasupra. Se ruleaza si apoi se face in forma de melc. Se intinde din nou cu sucitoarea. Cand eram mica bunica mea facea tot felul de combinatii cu pepene galben. Mi-am zis sa incerc si eu piersici cu pepene galben. A iesit foarte buna si nu a trebuit mult zahar pentru ca pepenele era foarte dulce si aromat. Singurul minus al acestei retete este timpul mare de fierbere pentru ca pepenele galben lasa multa apa. (sa nu uitati sa mai amestecati in piersici ca sa nu se prinda).</div><div style="text-align: center;">Ca sa nu patiti ca mine (referitor la timpul mare de fierbere) puteti marunti cu o furculita fructele sau mixa cu un blender.</div><div style="text-align: center;">Cand piersicile au inceput sa lase zeama se adauga pepenele si lamaia taiata felii.</div><div style="text-align: center;">Se lasa sa fiarba pana fructele devin pasta, dar, atentie, amestecati din cand in cand pentru ca se prinde foarte repede de oala.</div><div style="text-align: center;"> Ca sa vedeti consistenta dulcetii, scoateti putin pe o farfurie. Lasati sa se raceasca si veti vedea cum va fi in borcane. Daca vi se pare prea lichida lasati sa mai fiarba pana se mai ingroasa putin. Cu vreo 10-15 minute inainte de a fi pusa in borcane, adaugati zaharul amestecand mereu. </div><div style="text-align: center;">Eu am folosit doar 1 kg de zahar. Dupa vreo 5 minute de cand ati pus zaharul gustati dulceata. Se mai poate adauga zahar daca considerati ca nu este destul de dulce.</div><div style="text-align: center;">Inainte de a stinge focul, adaugati jumatate de lingurita de conservant si amestecati bine.</div><div>

Se amesteca cu sosul ragu(n borcanel de 400 gr).</div><div style="text-align: center;">Deasupra se pune un strat generos de bechamel si cascaval.</div><div style="text-align: center;">
